Since Fall is slowly creeping in, I thought I would share the recipe for my (not so) FAMOUS Brat and Potato soup.
2 medium Yukon Gold potatoes, peeled and diced
1 package of brat burgers, crumbled
1 can cream of potato soup
3 cups chicken broth
1 cup evaporated milk
seasoned salt & pepper
dried parsley flakes
Combine potatoes, can of potato soup, and chicken broth in large pot on low heat. Brown crumbled brat burgers as you would hamburger meat, and drain. I prefer to overcook mine just a little bit. I love the flavor produced that way. Add to pot and cook for one hour. Make sure the potatoes cook down til they're tender. Add milk and seasonings to taste--cook through. Sprinkle with dried parsley before serving.
